PORTIONS
Ingredients
- 2 tbsp olive oil
- 1 finely chopped onion
- 1 grated garlic clove
- 2 cups washed and strained rice
- 3 cups water
- 6 cups spinach finely chopped
- Salt/pepper to taste
Instructions
Sauté the onion and the garlic in olive oil until golden brown and then add the rice. Stir for a little while before adding the water and salt.
Once the water boils lower the heat and cover the pot with a lid until the rice absorbs the water. Add the spinach and stir until the spinach leaves wilt. Enjoy with plenty of lemon juice.
