Ingredients

  • ½ cup quinoa
  • 500 ml (2 cups) water
  • Pinch of salt
  • 2 carrots (grated)
  • 1 small beetroot (grated)
  • 3-4 broccoli florets
  • ½ cabbage (grated)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt/pepper

Instructions

Simmer the quinoa in salted water for 10-15 minutes or until tender. Strain and allow to cool.

Add the carrot, beetroot, broccoli, cabbage and mix well.

Add olive oil, lemon, salt and pepper to taste.

Enjoy as a main or side dish.
