PORTIONS
Ingredients
- 600 g green peas cooked and strained
- 1 finely chopped onion
- 2-3 courgettes (100 g), grated and squeezed well to remove the excess water
- ½ – 1 cup gluten free oats
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tbsp ground dry coriander
- 4 tbsp olive oil
Instructions
Mash the green peas with a masher or fork.Add the onion, courgettes, oats, salt, garlic powder, onion powder, coriander and 2 tbsp olive oil.
Mix well by hand until the mixture becomes sticky. If it is too wet, add a few more tbsp of oats until it combines.
Shape the mixture into patties and place them on an oven tray lined with non-stick baking paper. Drizzle with the rest of the olive oil and cook at 180°C for 20-25 minutes until golden brown.
Enjoy with homemade vegan mayonnaise, lettuce, tomato and fresh bread.
