Ingredients

  • 600 g green peas cooked and strained
  • 1 finely chopped onion
  • 2-3 courgettes (100 g), grated and squeezed well to remove the excess water
  • ½ – 1 cup gluten free oats
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tbsp ground dry coriander
  • 4 tbsp olive oil

Instructions

Mash the green peas with a masher or fork.Add the onion, courgettes, oats, salt, garlic powder, onion powder, coriander and 2 tbsp olive oil.

Mix well by hand until the mixture becomes sticky. If it is too wet, add a few more tbsp of oats until it combines.

Shape the mixture into patties and place them on an oven tray lined with non-stick baking paper. Drizzle with the rest of the olive oil and cook at 180°C for 20-25 minutes until golden brown.

Enjoy with homemade vegan mayonnaise, lettuce, tomato and fresh bread.
