Ingredients

  • 500 g cooked beans (strained)
  • 1 finely chopped onion
  • ½ – 1 cup gluten free oats
  • 2 medium size courgettes, grated and squeezed well to remove the excess water
  • ½ bunch parsley finely chopped
  • 4 tbsp olive oil
  • Salt/pepper to taste

Instructions

Mash the beans using the potato masher.

Add the onion, oats, courgettes, parsley, 2 tbsp of the olive oil, salt and pepper. Mix well by hand until the mixture becomes sticky. If it is too wet, add a few more tbsp of oats until it combines.

Shape the mixture into patties and place them on an oven tray lined with non-stick baking paper. Drizzle with the rest of the olive oil and cook at 180°C for 20-25 minutes until golden brown.

Enjoy with tahini, salad and fresh bread.

*Bean and lentil leftovers make excellent burgers.
