Ingredients
- 500 g pumpkin
- 2 tbsp olive oil
- 1 sliced onion
- 1 garlic clove with the skin
- Salt/pepper to taste
- 1 tbsp dry thyme
- 1 ½ -2 L water
Instructions
Cut the pumpkin into large pieces and place them in an ovenware dish.
Drizzle with olive oil and season with salt, pepper and thyme.
Add the onion and garlic (with skin) and stir well until everything is well coated in olive oil.
Roast at 180°C for 20 minutes.
When the vegetables are soft, remove the skin from the garlic and put all the ingredients in the blender. Add 500 ml of water and blend until the mixture is smooth.
Add the mixture in a pot along with the rest of the water and heat. Add extra water if you prefer a thinner soup.
Enjoy warm or cold.
