Ingredients
For the baked carrots
- 200gr carrots
- Salt by taste
- Pepper by taste
- 2 garlic cloves
- 30ml olive oil
- 2 tbsp agave syrup
- Fresh rosemary
- 1 onion, sliced
For the pesto from carrot tops
- Carrot tops
- 2-3 spring onions
- Fresh basil
- 1 garlic clove
- Salt to taste
- Pepper to taste
- Juice and zest from 1/2 lemon
- 100g pine nuts
- 50ml olive oil
Instructions
For the baked carrots
Place all ingredients in an oven pan and mix well.
Bake for 20’ at 180°C.
For the pesto
Place all ingredients in a food processor and mix well. Served with hot or in room temperature carrots! Enjoy!
