Ingredients

For the baked carrots

  • 200gr carrots
  • Salt by taste
  • Pepper by taste
  • 2 garlic cloves
  • 30ml olive oil
  • 2 tbsp agave syrup
  • Fresh rosemary
  • 1 onion, sliced

For the pesto from carrot tops

  • Carrot tops
  • 2-3 spring onions
  • Fresh basil
  • 1 garlic clove
  • Salt to taste
  • Pepper to taste
  • Juice and zest from 1/2 lemon
  • 100g pine nuts
  • 50ml olive oil

Instructions

For the baked carrots

Place all ingredients in an oven pan and mix well.

Bake for 20’ at 180°C.

 

For the pesto

Place all ingredients in a food processor and mix well. Served with hot or in room temperature carrots! Enjoy!
