Ingredients
- 1 cup of rice suitable for soups (carolina)
- 3 L of water + 1-2 L more water if needed
- 1 whole onion
- Salt
- 1 tsp of vegan stock
- Lemon juice (1/2 – 1 lemon)
Instructions
Add the rice, water, whole onion, salt and stock into a pan and let it boil until the rice is well cooked.
Add the onion, some of the water and 6-8 tbsp of the cooked rice in a blender and blend until smooth.
Transfer the mixture back to the pan, add lemon juice to taste and hot water if needed.
Stir well and let the soup come to a boil!
Serve hot and enjoy!
