Ingredients

  • 250 g cooked red beans
  • ½ bunch of coriander or parsley finely chopped
  • 1 large tomato, deseed and chop finely
  • 2-3 fresh spring onions finely chopped
  • 1 avocado cut into pieces
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt/pepper to taste

Instructions

Mix all the ingredients together and enjoy.

*When cooking legumes use plenty of water and no salt.
