PORTIONS
Ingredients
- 4 tbsp olive oil
- 2 grated garlic cloves
- 8-10 g grated fresh ginger
- 1 tsp salt
- ½ tsp pepper
- 2 tbsp tomato sauce
- 1 tsp turmeric powder
- 4 medium size aubergines with the skin
- 2 medium size sweet potatoes with skin
- 1 taro root (kolokasi)
Instructions
In a deep bowl, mix the olive oil, garlic ginger, salt, pepper, tomato sauce and turmeric to form a paste.
Cut the vegetables in strips (about 8 cm X 2 cm) and coat them one by one with the olive oil mixture.
Spread the vegetables evenly on 2 oven trays lined with non-stick baking paper. Ensure that each strip is separate and not laying on top of another.
Cook at 170°C for 15-20 minutes or until golden brown.
Enjoy with fresh salad and plenty of lemon juice.
