Apples have antioxidant properties concentrated in the peel. The skin is the protection layer of the fruit since if you expose the inner flesh to the world it starts to brown – oxidise within minutes.
A substance found in the peels of apples appears to reactivate a Tumor – Suppressing Gene called “mapsin”. MAPSIN helps to keep breast cancer in remission.

Units of measurement in all recipes:
- 1 cup is the equivalent to 250ml
- a tsp is the equivalent to 5g

Liquids like water and oil are measured in millilitres(ml) and litres(L) by using a measuring jug and solids like flour and sugar are measured in grams (g) and kilograms (kg) using scales. Όσπρια
Do you have cooked beans, lentils or chickpeas? No problem, you can make some lovely burgers. Strain them and add fresh coriander or parsley, finely chopped onion, some olive oil, salt, pepper and any other spice you like. Mix well so that the legumes are broken down but not mash, then shape the mixture into patties. Bake at 180°C for 25-30 minutes. Serve with salad and tahini or hummus. Enjoy!

The parsley and garlic trick is well known. Does it work? A test will convince you! Add a little parsley
where you have put raw garlic as in tahini sauce or hummus.

If you are ready to cook but are missing a certain ingredient what will you do? All recipes can be adjusted. For example, wherever a recipe lists white sugar, you can replace it with brown sugar or coconut sugar. Also icing sugar can be replaced with ground coconut sugar. Wherever we find syrup, we can use dates syrup, agave, maple, brown rice, etc. Butter can be replaced with plant-based butter and in some cases with olive oil or coconut oil.
Μαγιά
It is not necessary to activate the dry yeast in lukewarm water or plant-based milk. You can put the yeast directly in the flour. Heat your oven set at 70°C for 5 minutes, turn off the oven, put the dough in an ovenware dish, cover it with baking paper, place a kitchen towel on top and put it in the oven until it doubles in size. Attention! The ovenware dish should be big enough to allow the dough to double or triple in size. If it’s not big enough, the dough will spill over the sides into the over and create a sticky mess.

We avoid white processed sugar and modify and our recipes that require it. We replace white sugar
with unprocessed sugar, coconut sugar or various syrups such as maple syrup, agave syrup and
brown rice syrup. We prefer to mix coconut sugar or syrups in our liquid ingredients of the recipe
because it’s easier to dissolve. If a recipe requires icing sugar, then grind some coconut sugar in the
spice grinder. The final colour might be darker but the taste is wonderful!

If you have over ripe bananas don’t throw them away. You can blend them with a plant based milk to make a lovely shake, use them to make a banana cake or freeze them for an easy ice-cream.
Οχι στο αλουμινόχαρτο!!
It is not necessary to wrap in aluminium foil the unpeeled potatoes (jacket potatoes) that we put in
the oven. After washing them thoroughly, put them in a heatproof pan without any wrapping, pierce
them 1-2 times with a fork and bake them at 180°C for 30-35 min or until very soft.
Καστανό ρύζι
Brown rice is healthy and delicious but it takes double the usual cooking time of white rice. For this reason we suggest letting it soak in cold water over night.
